Orange halloumi salad with turmeric chicken

Serves: 1


  • Olive oil
  • Salad leaves or watercress
  • 1 carrot thinly sliced with a peeler
  • 1/2 orange, white parts removed & thinly sliced
  • 1 tbsp dijon mustard
  • 1 tsp honey
  • 1/2 tbsp apple cider vinegar
  • 1/2 chicken breast
  • 1 tsp turmeric
  • Herbs e.g. thyme or oregano
  • Salt and pepper
  • 4 thin slices of halloumi


  1. Combine salad and carrot in a bowl
  2. Mix 1 tbsp dijon mustard, 1 tsp honey, 1/2 tbsp apple cider vinegar and 1 1/2 tbsp olive oil in a small bowl or jar until combined
  3. Pour dressing onto the salad and mix well
  4. Combine 1 tsp turmeric, herbs, 2 tbsp olive oil and salt & pepper in a bowl and marinate the chicken breast until well coated
  5. Grill the chicken breast and halloumi slices on a frying pan until chicken is cooked and the halloumi is golden
  6. Top the salad with the orange slices and grilled halloumi
  7. Slice the chicken into strips and place on the side
