Brussel sprout and cranberry salad

Ingredients

  • 1 packet of brussel sprouts, ends removed and thinly shredded
  • Olive oil
  • Salt and pepper
  • Lemon juice
  • Dried cranberries
  • Toasted cashews or pine nuts

Method

  1. Add brussel sprouts to a fry pan with olive oil (cook in batches so all the veg gets nicely browned) and fry until golden brown
  2. Place fried brussels to a salad bowl and season with salt and peper and lemon juice to taste
  3. Clean and dry fry pan and add cashew nuts or pine nut and toast until golden
  4. Top with dried cranberries and toasted nuts
