Ingredients
- 1 packet of brussel sprouts, ends removed and thinly shredded
- Olive oil
- Salt and pepper
- Lemon juice
- Dried cranberries
- Toasted cashews or pine nuts
Method
- Add brussel sprouts to a fry pan with olive oil (cook in batches so all the veg gets nicely browned) and fry until golden brown
- Place fried brussels to a salad bowl and season with salt and peper and lemon juice to taste
- Clean and dry fry pan and add cashew nuts or pine nut and toast until golden
- Top with dried cranberries and toasted nuts
