Steak with peppercorn sauce

Serves: 4

Ingredients

Potatoes:

  • 6 potatoes cut into 1cm fries
  • 1/2 bunch of fresh thyme, leaves picked
  • Olive oil
  • Salt & pepper

Steak:

  • 4 steak fillets
  • Olive oil
  • Salt and pepper

Peppercorn sauce:

  • 200g cream
  • 2 eschalots, thinly sliced
  • 1 garlic clove crushed or finely diced
  • 1/2 bunch of thyme, leaves picked
  • 1 tbsp crushed / ground black peppercorns

Garlic kale:

  • 40g butter
  • drizzle of olive oil
  • 1 garlic clove crushed or finely diced
  • 1 bag / large bunch of kale, thinly sliced
  • Dash of water
  • Salt and pepper

Other:

  • 150g macadamia nuts

Method:

  1. Preheat oven to 200°C and line a baking tray with baking paper or a mat
  2. In a large bowl combine potato fries, 1/2 bunch thyme leaves, a drizzle of olive oil and salt and pepper
  3. Add to baking tray in a single layer and cook for 30 minutes, mixing fries half way through
  4. Heat a frying pan over a medium-high heat. Add the macadamias and toast, tossing, until golden, 3-4 minutes. Transfer to a small bowl
  5. Return the pan to a high heat with a drizzle of olive oil. Season the steak with salt and pepper and add to the hot pan. Sear until browned, 1 minute on all sides. Transfer to a second oven tray lined with baking paper and roast for 8 minutes. Remove from the oven and set aside to rest for 10 minutes
  6. While the steak is resting, return the pan to a medium heat with a drizzle of olive oil. Add the eschalot, 1 tbsp peppercorns, 1/2 bunch of thyme leaves and garlic. Cook until softened, 1 minute. Reduce the heat to low and stir in the cream and any resting juices from the steak. Cook until thickened, 2 minutes. Season to taste with salt. Remove from the heat
  7. In a second medium frying pan, heat the butter and a drizzle of olive oil over a medium heat. Add the garlic and cook until fragrant, 1 minute. Add the kale and a dash of water and increase the heat to medium-high. Cook, stirring, until softened, 5-6 minutes. Season to taste with salt and pepper
