Chimichurri chicken

Ingredients

  • 2 chicken breasts seasoned with salt, pepper and paprika
  • 1 punch of flat leaf parsley
  • 1 garlic clove
  • 1/2 tsp chilli flakes
  • 2 tbsps red wine vinegar
  • 3 tbsps olive oil
  • Juice of half a lemon
  • Salt

Method

  1. Heat a grill or pan to medium / high heat and grill chicken breasts until cooked through and set aside to rest
  2. Add parsley, 1 garlic clove, 1/2 tsp chilli flakes and 2 tbsps red wine vinegar to the Thermomix bowl and chop on speed 5 for 5 seconds. Scrape down the sides of the bowl and repeat until the parsley is very finely cut
  3. Empty parsley mixture to a bowl and add 3 tbsps olive oil to the paste and mix with a spoon
  4. Add juice of half a lemon and mix
  5. Season with salt to taste
  6. Slice chicken breast on an angle and top with chimichurri sauce
  7. Serve with rice and vegetables of your choice or a salad
