Mexican sprout salad


  • 1 packet of mung bean sprouts, micro sprouts or micro greens
  • 1 tomato
  • 1/2 cucumber
  • 1/2 capsicum
  • 2 spring onion shoots (green parts only)
  • 1/2 avocado
  • Small bunch of coriander
  • Juice of 1 small lime
  • Olive oil
  • Salt and pepper
  • 1 tsp cumin powder
  • Chilli flakes


  1. Add sprouts, 1 tomato chopped, 1/2 cucumber diced, 1/2 capsicum diced, 2 spring onion shoots thinly chopped, 1/2 avocado diced and a small bunch of coriander chopped to a mixing bowl
  2. Squeeze the juice of 1 lime over the salad
  3. Add a drizzle of olive oil
  4. Season with salt and pepper
  5. Add 1 tsp cumin powder
  6. Add chilli flakes for desired heat
  7. Mix until combined
  8. Serve on a bed of iceberg lettuce as a side to any meal
