Ingredients:
- 1 cup quinoa
- 3 potatoes
- 1 white onion
- Salt
- 1 red capsicum
- 1 teaspoon garlic powder
- 2 tablespoons salsa
- 1/2 cup nutritional yeast
- Corn chips
- Avocado
- Spring onion
- 1 fresh tomato diced
- Lime
Method
- Preheat oven to 180°C
- Cook 1 cup of quinoa as per packet instructions and set aside to dry out
- Roughly chop 3 potatoes and 1 white onion and add to a pot of boiling water with some salt and boil for 10 minutes or until potato is cooked
- Blend together 1 red capsicum roughly chopped, 1 teaspoon salt, 1 teaspoon garlic powder, 2 tablespoons salsa, 1/2 cup nutritional yeast, the boiled potato and onions drained, 1/4 to 1/2 cup of potato and onion water (depending on thickness of blended mix)
- Assemble on a plate with corn chips and quinoa at the bottom, pour on lots of the cheese sauce, top with salsa, chopped tomato, avocado and green onion
- Sprinkle smoked paprika on top and serve with a lime wedge
