Vegan Nachos

Ingredients:

  • 1 cup quinoa
  • 3 potatoes
  • 1 white onion
  • Salt
  • 1 red capsicum
  • 1 teaspoon garlic powder
  • 2 tablespoons salsa
  • 1/2 cup nutritional yeast
  • Corn chips
  • Avocado
  • Spring onion
  • 1 fresh tomato diced
  • Lime

Method

  1. Preheat oven to 180°C
  2. Cook 1 cup of quinoa as per packet instructions and set aside to dry out
  3. Roughly chop 3 potatoes and 1 white onion and add to a pot of boiling water with some salt and boil for 10 minutes or until potato is cooked
  4. Blend together 1 red capsicum roughly chopped, 1 teaspoon salt, 1 teaspoon garlic powder, 2 tablespoons salsa, 1/2 cup nutritional yeast, the boiled potato and onions drained, 1/4 to 1/2 cup of potato and onion water (depending on thickness of blended mix)
  5. Assemble on a plate with corn chips and quinoa at the bottom, pour on lots of the cheese sauce, top with salsa, chopped tomato, avocado and green onion
  6. Sprinkle smoked paprika on top and serve with a lime wedge
