Oat flour pancakes

Ingredients (serves 2):

  • 1/2 cup oats
  • 2 ripe banana (or 1/2 cup of milk for plain pancakes)
  • 2 eggs
  • 1 tsp vanilla
  • Pinch of salt
  • Butter
  • Nut butter
  • Fruit e.g. blueberries or banana
  • Maple syrup

Method:

  1. Add 1/2 cup of oats to the thermomix bowl and mill for 10 sec / speed 10
  2. Add 2 ripe bananas (or 1/2 cup of milk), 2 eggs, 1 tsp vanilla (omit if doing plain pancakes) and a pinch of salt and mix for 30 sec / speed 4
  3. Place a fry pan on medium to high heat and melt 1 tsp of butter spreading it evenly over the pan’s surface
  4. Pour some of mixture into the pan and spread it out in a circle with the back of a spoon or by tilting the pan in a circular motion
  5. Fry until golden on both sides. Add 1 tsp of butter before each pancake
  6. Serve with nut butter, fruit and maple syrup
