Ingredients (serves 2):
- 1/2 cup oats
- 2 ripe banana (or 1/2 cup of milk for plain pancakes)
- 2 eggs
- 1 tsp vanilla
- Pinch of salt
- Butter
- Nut butter
- Fruit e.g. blueberries or banana
- Maple syrup
Method:
- Add 1/2 cup of oats to the thermomix bowl and mill for 10 sec / speed 10
- Add 2 ripe bananas (or 1/2 cup of milk), 2 eggs, 1 tsp vanilla (omit if doing plain pancakes) and a pinch of salt and mix for 30 sec / speed 4
- Place a fry pan on medium to high heat and melt 1 tsp of butter spreading it evenly over the pan’s surface
- Pour some of mixture into the pan and spread it out in a circle with the back of a spoon or by tilting the pan in a circular motion
- Fry until golden on both sides. Add 1 tsp of butter before each pancake
- Serve with nut butter, fruit and maple syrup
