Ingredients
Beef marinade:
- 20g peanut oil
- 1 tsp dried chilli flakes
- 1 tsp miso paste
- 20g fish sauce
- 500g beef (sirloin steaks work well)
Peanut dressing:
- 1cm piece of ginger
- 1 fresh red chilli
- 50g peanut butter
- 20g soy sauce
- 50g rice wine vinegar
- 20g honey
Salad:
- 2 carrots cut into match sticks
- 1 cucumber sliced into ribbons with a peeler
- 1 red capsicum cut into thin strips
- 2 spring onions cut into thin slices
- Small bunch of mint, chopped
- Small bunch of coriander, chopped
- Roasted peanuts
- Bean sprouts (optional)
Method:
- Place 20g peanut oil, 1 tsp chilli flakes, 1 tsp miso paste and 20g fish sauce into mixing bowl and blend 10 sec / speed 7 then transfer into a bowl
- Add steaks, coat in marinade and set aside. Do not clean mixing bowl
- Place 1cm piece ginger and 1 fresh chilli into mixing bowl and chop 5 sec / speed 7. Scrape down sides of mixing bowl with spatula
- Add 50g peanut butter, 20g soy sauce, 50g vinegar and 20g honey and mix 10 sec / speed 7. Transfer into a jug and set aside. Do not clean mixing bowl
- Place a frying pan over high heat. Add steaks and sear for 2-3 minutes, turning once, until browned and cooked medium rare. Transfer onto a separate plate and set aside to rest
- Assemble all salad ingredients into serving bowls except for the peanuts
- Thinly slice the beef and add to the top of the salad bowls
- Drizzle peanut dressing over everything and top with peanuts
