Ingredients
- 2 pork rib racks (with 10 ribs per rack)
- 40 g olive oil
- 1 onion, cut in half
- 30 g tomato paste
- 30 g soy sauce
- 1 tbsp apple cider vinegar
- 40 g Maple syrup
- 1 cm piece of ginger
Method
- Preheat the oven to 200°C and line a tray with baking paper
- Place onion, garlic and ginger in mixing bowl and chop 3 seconds, speed 5. Scrape down sides of bowl
- Add oil and cook 3 mins, varoma, speed 1
- Add tomato paste, soy sauce, vinegar and maple syrup and mix for 5 seconds, speed 5
- Place the ribs on the baking tray and cover with the sauce
- Bake for 40 minutes
- While the ribs are baking, cook 350g rice in the Thermomix
