Super easy roast chicken dinner

This dinner isn’t a quick meal but it is, as the title says, super easy.

Ingredients

  • 500g cubed vegetables like sweet potato, swede, carrot, red onion, zucchini
  • Olive oil
  • Seasoning from whatever dried herbs and spices you have e.g. oregano, thyme, rosemary, paprika, salt and pepper
  • 1 roast in the bag whole chicken

Gravy

  • 1 tablespoon stock paste
  • 1 tablespoon cornflour mixed with 1 tablespoon of cold water

Method

  1. Preheat oven to 180°C
  2. Place chicken on a tray with baking paper and place in the oven (don’t remove from bag) and cook for 90 minutes or as per instructions on the chicken
  3. Place cubed vegetables on a tray with baking paper and coat with olive oil
  4. Generously sprinkle vegetables with your spice mix and place in the ovenIMG_20171128_194810.jpg
  5. Once finished, remove the chicken from the bag and let it rest on a chopping board
  6. Add 1 tablespoon of stock paste and 1 tablespoon of cornflour mixed with 1 tablespoon of water to the juices left in the bag and mix well
  7. If the gravy isn’t thick enough, transfer to a mug and microwave for 30 seconds
