Chilli lime pork ribs

The original recipe comes from here. I’ve reduced the amount of honey and usually add more fresh herbs so as to not waste them. Serves 4.

  • 5 cloves garlic
  • 3cm piece peeled ginger
  • 2 small chillies or to taste
  • ½ red onion peeled
  • Handful fresh mint leaves
  • Handful fresh coriander leaves
  • 2 tsp coriander seeds
  • 2 tsp cumin seeds
  • 2 tsp sesame oil
  • Juice of 2 limes
  • 50 g soy sauce
  • 70g honey
  • 2 racks pork ribs

  1. Place 5 garlic cloves, a 3cm piece of ginger, 1-2 chillies, 1/2 red onion, handful of mint, handful of coriander, 2 tsp coriander seeds, 2 tsp cumin seeds, 2 tsp sesame oil into TM bowl and chop for 5 seconds on speed 7
  2. Add lime juice, 50g soy sauce and 70g honey and mix for a further 8 seconds on speed 10
  3. Place each rack of ribs on a large rectangle of foil and then drizzle with marinade and wrap extremely well
  4. It’s best if you can leave the ribs to marinate for at least 2 hours but if not continue as normal
  5. Preheat oven to 150ºC and cook for 2-3 hours or until well browned OR if you are in a hurry preheat to 200ºC and cook for 1 hour or until well browned
  6. Serve with steamed (or stir fried with garlic and ginger) vegetables and riceIMG_0181.JPG
