Bacon wrapped chicken

My fiance and I invented this recipe with whatever ingredients we had on our campervan trip around Scotland. It turned out so well that we decided to have it again. Now it’s been added into our regular rotation of dishes. Serves 2 add more chicken breasts to serve more people.


  • 2 chicken breasts
  • 4 rashers of bacon
  • A few shavings of parmesan cheese
  • 4 parsley sprigs
  • 3 slices of butter
  • Large bunch of spinach roughly chopped
  • Garlic granules
  • Salt and pepper for seasoning


  1. Make the sweet potato mash from this recipe
  2. Slice the chicken breasts along the middle but stop before reaching the end (to achieve an ‘open book’ shape)
  3. Place a piece of butter, a few sprigs of parsley and some parmesan cheese on one half and close the other half on top like a sandwich
  4. Wrap each chicken breast as tightly as possible with two bacon rashers and season with salt and pepper
  5. Add a little olive oil to a hot pan and fryIMG_0175
  6. Turn the chicken breasts every few minutes to brown each edge
  7. The chicken takes approximately 15-20 minutes to cook. Slice into a thick end to check it’s cooked through before serving
  8. To make the garlic butter spinach, use the same pan and add a large bunch of spinach, garlic granules and a knob of butterIMG_0176.JPG
  9. Saute for a few minutes until all the leaves have wilted
  10. Serve the chicken and spinach with sweet potato mashIMG_2042.jpg
