Curried sausages and rice

This recipe was adapted to our tastes and the Thermomix from a recipe my Aunty taught me when I was a kid. It’s a delicious meal that reminds me of my childhood that is very typical of Australian country cooking.


  • 350g long grain rice
  • 500g pork sausages
  • 2 tbsps vegetable stock paste
  • 2 bay leaves
  • 1 brown onion, halved
  • 1 carrot, roughly quartered
  • 1 celery stick, roughly quartered
  • 1 red apple, finely diced
  • 1 tbsp curry powder
  • 1 tbsp corn flour mixed with a dash of water


  1. Cook 350g of boiled rice using the Thermomix Basic Cookbook boiled rice recipe
  2. Pierce each sausage with a knife to prevent the skin from breaking and add to a large pot with the vegetable stock paste and bay leaves. Cover with hot water and place on a high heat until boiling then reduce to medium to simmer for 20 minutes
  3. Once rice is cooked set aside in a ThermoServer
  4. Dry the TM bowl and add the onion, chop for 3 seconds/speed 7
  5. Add the onion to a fry pan with olive oil on a medium heat to saute until soft
  6. Add the carrot and celery to TM bowl and grate for 5 seconds/speed 5. Set aside
  7. Once the sausages have simmered for 20 minutes drain the liquid keeping 1 cup of stock
  8. Slice the sausages into diagonal pieces and add to the onion
  9. Bring the pan up to high heat and brown the sausages (~5 minutes)
  10.  Add the carrot and celery to the pan and reduce the heat to medium and cook for 2 minutes or until just soft
  11. Add reserved stock, apple, curry powder and corn flour mixture to the pan
  12. Mix everything until the sauce thickens to your liking
  13. Serve with rice and coriander on topIMG_0152
