Ingredients
Chops
- 8 large lamb chops
- Dried rosemary
- Salt to taste
Tzatziki
- 1 garlic clove
- Half a lemon
- 1 small lebanese cucumber or 15cm of a telegraph cucumber, grated
- 130g pouch of Greek Yoghurt (e.g. this one)
- 1 tablespoon olive oil
- Pinch salt
Sides
- Salad ingredients – lettuce, tomato, cucumber
- Chips – sweet potato or other
Method
- Heat oven to 200 degrees celcius
- Place the lamb chops on a lined baking tray and sprinkle with salt and rosemary
- If you are having chips, place them on another lined baking tray and spray with oil
- Place the lamb tray at the top of the oven and the chips anywhere else and cook for 45 minutes
- While the lamb is cooking, crush 1 garlic into a small bowl and squeeze 1/2 lemon on top
- Mix with a spoon until combined
- Coarsely grate the cucumber and squeeze out excess water
- Add cucumber, 130g pouch of greek yoghurt, 1 tablespoon of olive oil and a pinch of salt to the bowl
- Mix until well combined
- Prepare a side salad
- Serve the lamb chops with a heap of tzatziki with the salad and chips
