Homemade pizzas

Serves: 2 to 4 (makes 2 large pizzas)

Dough ingredients:

  • 500 grams 00 flour
  • 7 to 10 grams dried yeast (instant dried yeast can come in individual 7g sachets)
  • 5 grams salt
  • 5 grams sugar
  • 300 grams cold water

  • Tomato paste or pizza sauce
  • Your favourite toppings (pepperoni, capsicum, olives, mushrooms, ham)
  • Mozzerella cheese
  • Dried herbs and garlic

  1. Mix all the dough ingredients on speed 4 for 15 sec until combined
  2. Leave to sit in TM bowl for 10 minutes
  3. Press the wheat setting and select dough. Knead for 3 minutes
  4. Remove all the dough onto an oiled chopping board or workstation and form into 2 equal sized balls. Make sure you round them into perfect spheres to make rolling easier later
  5. Add a bit of olive oil to the bottom of two large bowls (large enough for the dough balls to double in size) and coat the sides in oil
  6. Place each dough ball into a bowl and cover with plastic wrap
  7. If you would like to make the pizzas the same day, place the bowls in a warm area for 30 to 60 minutes (next to a heater, on top of a fridge or inside an oven that has been turned off but is still warm)
  8. Or if you are making the dough ahead of time, place the bowls in the fridge overnight or until you are ready to cook them (you can make the dough a few days ahead, it gets more air bubbles over time making it lighter)
  9. Preheat the oven to 180°C
  10. Roll out each ball until you get your preferred thickness (I like it quite thin) and place on a pizza tray that is lined with baking paper or greased with olive oil
  11. Cover the dough with tomato paste or pizza sauce and your favourite toppings like pepperoni, mushroom, capsicum, fresh basil leaves, crushed garlic, kalamata olives, red onion, dried herbs and shredded mozzarella cheese
  12. Bake in the oven until golden brown
